2005 Food & Nutrition Conference & Expo (FNCE)

October 22-25, 2005

St. Louis, Missouri

We extend a special invitation to all attendees to visit the Beef Booth (#1421) and meet the coauthors of The Healthy Beef Cookbook, a recently published collection of 130 lean beef recipes, nutrition tips and culinary techniques. The American Dietetic Association and the National Cattlemen’s Beef Association combined their nutrition and culinary expertise to show how easy it is to bring healthy, great-tasting meals to the family table. Coauthors of the cookbook, Chef Richard Chamberlain and Betsy Hornick, MS, RD, will be at the booth to meet and greet visitors. The Healthy Beef Cookbook will be available for purchase at the ADA bookstore and at the Beef Booth.

While visiting the Beef Booth, be sure to take the protein quiz, pick up the latest information on beef nutrition, receive a free jar of spicy beef rub, and sample a delicious nutrient-rich beef recipe from the cookbook.

In addition to book signings, Richard and Betsy will also present a cooking demonstration, Dish on Great-Tasting, Nutrient-Rich Lean Beef, on Sunday, October 23, 10:15 – 11:00 a.m. from the Exhibit Hall Cooking Demonstration Stage.

October 23, 8:30 – 10:00 a.m.

Ruth DeBusk PhD, RD and Colleen Fogarty MS, RD will explain how to verbalize basic genetic concepts to help the public understand nutrition and genomics information.  Learn about the impact research advances may have on clinical practice.

Overweight Kids: What’s Really Happening Inside

October 23, 8:30 – 10:00 a.m.

Francine Kaufman, MD and Stephanie Gerken, RD will describe the epidemic of childhood obesity and the increasing prevalence of type 2 diabetes among youth. Discover some intervention strategies including nutrition, physical activity, behavior change and family involvement.

Health Literacy: Communicating Effective Verbal and Written Nutrition Messages

Evelyn Crayton, EdD, RD will describe the impact of low literacy on health outcomes and disparities, review governmental health literacy activities and identify effective interventions for promoting clear verbal and written communication to help individuals at all literacy levels improve health outcomes.

Teresa Nece, MS, RD, Patricia Mouser, RD and Constance Mueller, MS, RD explain how to engage, as a leader, in teams to create a solution to the epidemic of childhood obesity and overweight through school-based wellness policies.

Something New to Chew On: Research Goes Beyond Oral Health

October 23, 1:30 – 3:00 p.m.

Emerita Alcantara PhD, Rd, Marion Hetherington, PhD and Molly Gee, MEd, RD will share new developments in the benefits of chewing, beginning with oral health, and spanning into emerging areas of cognition, stress relief and satiety. Learn how to apply these developments to advice for caloric intake and weight management.

Emerging Role of Protein for Improved Function and Health

October 24, 8:00 – 9:30 a.m.

Researchers, Donald Layman, PhD and Stuart Phillips, PhD will demonstrate the important difference between minimum protein requirements and optimal protein needs for adult health and performance. Find out how dietary protein contributes to preserving lean body mass during weight loss and achieving glycemic control.

DeWayne Street, diversity consultant, and Jeannette Jordan MS, RD will identify thought patterns that hinder positive lifestyle changes and show how to reach minority populations with relevant health messages for disease prevention.

Pitching Newsworthy Stories to the Media

October 25, 8:00 – 9:30 a.m.

From Lisa Drayer, MA, RD and Leah McLaughlin, learn how to successfully identify newsworthy items in studies or surveys and communicate why they are worthy to the media. Get tips on translating scientific findings into consumer-friendly language.
